So its no longer news that there is a tomato crisis in nigeria. Well the minister of agriculture made us know that a heat wave destroyed the tomato farms. What does this mean? We might be looking at months without the use of tomato *sigh*, just like everything in life you have to make due with this situation, sadly there would be no tomato to use for your fabulous Jollof rice (try tin tomatoes only if you just can’t do without Jollof rice) but there are other food you could prepare without using tomatoes like Ofada stew, Moi Moi, couscous and the list goes on.
Since the heat wave affected only tomatoes, we still have pepper to rely on and we still have other yummy vegetables like carrot, green peas, cabbage etc and guess what cucumber is in season (do I see someone nodding) so there is no need to stress we can still make yummy tasty fried rice that would make us forget there was ever a jol… what? see I’ve already forgotten;

What you’ll need;
- 2 cups of rice
- 1kg chicken (or any you prefare)
- Chicken seasoning
- Sausage/liver/shrimp (you can substitute any of this)
- Bay leaves
- Hot curry andTthyme
- All purpose seasoning (optional)
- Mixed Herbs
- Ground Ginger powder (optional)
- Seasoning cube
- Medium sized onions
- Sweet Corn
- Green pieces
- Red and Green Bell pepper (Green pepper)
- Spring onion
- Black pepper or ground red pepper
